Denver-based Thrice — the brainchild of founder and chief experience curator Abigail Plonkey — has been responsible for a range of inventive multi-sensory dining experiences, including Uchi’s Chroma, the Korean barbecue, and Barbie mash-up BarbieQ, a Campari Negroni experience at the Aspen Food and Wine Classic, and the New Years Party at the Ramble Hotel.

It all started as a passion project

The vision for Thrice started as a passion project, Founder Abigail Plonkey (Plantier) who came from the architecture and design industry, had an affinity for food, drink and design. Abigail traveled around the globe and experienced many different cultures and unique moments, she dreamed of bringing those moments to life. While also running an interior and experiential marketing and branding agency, she launched Thrice with a lookbook of concepts and harebrained ideas, she brought the concept to friends and colleagues. The rest is history, dream realized with the first pop up - Korean BarbieQ in August 2018, Larimer Square. The team grew from there with several key team members who helped build the vision and believe in the dream.

This is her space to bend the edges of the box in which corporate and client life can put you. In this realm, freedom comes from using items she finds and letting them dictate the story or finding a way to reimagine them inside her reality. And she’s used everything you can imagine — from hair extensions to soccer cones. “Anything goes. There are no boundaries… literally the world is my oyster. I can use any type of space and transform it. That inspires me,” she explained.

team & Collaborators

The team of creative collaborators consists of musicians and performers to mixologists, chefs, and digital storytellers. We engage local fabricators, photographers, artists, lighting designers, promotions, and hype team members. Each person plays a crucial role in bringing the vision to life.
